    SO many questions!

    1. How was the salad?
    2. Do you think you can replicate that lemon tart and share the recipe? It looked AWESOME!
    3. Was that wild rice dish raw and if so, how do you “cook” it?
    4. As a science nerd and personal trainer, I’m actually really interested in the nutritional side of the raw diet. I would love to see a “nutrition of raw eating” post sometime in the future. I’m especially interested in absorption of all that raw food because I know that some foods are better absorbed when cooked (like onions). I’m also interested in the general nutritional break-down of a raw diet–the typical ratio of carbs: protein: fat, etc. It would help educate me as well as anyone pursuing a raw diet. I’d also love to see the same for a non-raw vegan diet sometime.

    Just the other day, I whipped up an avocado based salad dressing that made my avocado-queasy husband repent of his ways!
    It’s a simple recipe:
    1 avocado
    2 green onions, finely chopped
    1/2 cup olive oil
    juice from one lemon
    a few dashes red pepper flakes
    sea salt and pepper to taste
    garlic (optional)

    Then blend, baby, blend! Sooooooooo good with raw veggies, on salads (and for those of you who are not opposed: on eggs, fish, shrimp, and chicken. Also a great sub for mayo in tuna salad.) I’m sure you could find many excellent uses for it. 🙂

    The raspberry cake looks so good, I found a similar recipe at Rawmazing which I have been meaning to make for a while!
    My fave eats from this weekend is without a doubt the chocolate fudge I posted yesterday! TOO good!

    Actually, I’m more interested in what you’re learning (nerdery) than the food porn! I’m weird like that, I know. Love the tidbit you offered there, and what a whirlwind class. Food all looks yummy too. I guess the white choc-raspberry was pricy because cacao butter is so pricy. I love the version that I make..

    I’m pretty happy about the raw biscotti I made yesterday, and I just put together the components for a French-style carrot salad for the Eurovision party tonight (carrot, dijon, honey, apple cider vinegar… I could drink the dressing!!) so there’ll be at least one vegan dish there! When you buy the smoothies, do they list what’s in them? As you know, I’ve just reignited my affair with my VM, and the Berries n Cream looks goooood! 😀

    I can honestly say I’ve never had sprouted wild rice (or any rice) before…
