Get this: I have been home fewer than 10 total days, and not one single weekend, since April.
I’ve had trip after trip going on, and Matt and I leave for the last one (for a few weeks, at least) tomorrow. Consequently, I am days and days, if not weeks, behind on everything from posting/blogging to replying to emails. Please bear with me as I play catch-up! With so many awesome travel eats to share with you, though, I don’t think you’ll mind. 🙂
On to my last post about Living Light. This one’s all sweets, snacks, and desserts!
During my last several days in Fort Bragg, I enjoyed snacking on dried figs and these “carob spirulina energy chunks” I got from the bulk section of a local market.
I also had one last bowl of the Café’s amazing buckwheat granola, this time with blueberries and vanilla almond milk.
This tall slice of raw apple pie was made by the students in the culinary classes upstairs.
Well done, guys! I loved the thinly sliced apples and the walnutty crumble inside.
I ate one more raspberry-cherry chocolate cream crumble, one of my favorite desserts at the Café.
Must. Recreate this. At home. ASAP.
My final breakfast was this homemade chia pudding with coconut milk, cinnamon, vanilla, chopped fresh apples, and crushed pecans.
The last night I was at the Inn, I gave into some [mild] peer pressure from Kerry, the Innkeeper, and some of the other guests, and made one last batch of blondies. I shaped these into balls to make them more portable, and I took a bunch of them with me the next day to sustain me during my long day of traveling.
All in all, my time at Living Light was more than I could’ve even hoped it would be. The nutrition courses I took were incredible, and everyone I met, from Cherie to my instructors to my classmates, was a joy to spend time with, and I formed some friendships which I hope will last a very long time. Miss you all already!
